Had some leftover Brie Cheese from the thanksgiving layout. Here's what I came up with.
Brie Apple Breakfast Tortilla
Total time from start to finish: Approx 10 minutes.
Ingredients:
Apple
Brie Cheese: Small Wedges
Corn Tortillas
Ground Cinnamon
Olive Oil
Salt
In a skillet: Med / High heat:
Pour one tablespoon olive oil into a skillet; sprinkle with salt. Place one corn tortilla in pan, rub around until oil and salt are distributed evenly around pan. Place 4 apple wedges and 4 wedges of brie cheese on tortilla. Cook on until cheese and apple are soft and bottom of tortilla has a contrasting crispy brown consistency. Sprinkle with cinnamon. Let cool for a few minutes. Slice with pizza cutter. Enjoy.
